The domestic market is the story. Two hundred million consumers mean a processor can build a serious business without ever exporting, which changes the specification: buyers want volume, price and consistency rather than EU documentation. Ginger is sold on oleoresin and gingerol content, both of which fall as drying temperature rises. The commercial temptation is to dry hot and fast because the rhizome is dense and slow; the result is a pale, weak product that prices as a spice rather than as an extract feedstock.
