Cocoa drying systems in Nigeria
What the crop demands, what the country imposes, and what that means for capacity.
Nigerian cocoa was once a larger industry than it is, and quality reputation is the main reason it recovered less well than Ghana’s. Beans are dried on mats at farm level with little grading, and the resulting inconsistency prices the crop below its Ivorian and Ghanaian equivalents even when the underlying bean is comparable.
The situation in Nigeria
The domestic market is the story. Two hundred million consumers mean a processor can build a serious business without ever exporting, which changes the specification: buyers want volume, price and consistency rather than EU documentation. Power is the binding constraint almost everywhere, and a heat source that does not depend on the grid is not a sustainability choice here but an operational one.

What cocoa bean drying demands
Cocoa drying is fermentation completion, not water removal — the reactions started in the fermentation box continue through the first days on the mat, and rushing them locks in acidity and astringency the roaster will taste. Beans must reach 7–8 % moisture slowly. Too fast and the bean is acidic; too slow, or rained on, and it moulds.

Main crop September to February in Ondo, Cross River and the south-west. The early part overlaps the tail of the rains.

Why does Nigerian cocoa price below Ghanaian?
On consistency rather than on the bean itself. Farm-level mat drying with little grading produces variable moisture against a 7–8 % target and variable defect counts, and lots grade on their worst fraction rather than their average — so the discount is addressable by process rather than structural.
What does controlled drying change on the cut test?
Principally mould and smoke taint, the two defects that most reliably discount a lot. A controlled 50–60 °C descent to 7–8 % over 20 to 30 hours removes the rewetting that causes the first and the wood fire that causes the second.
Is 10 t/day a sensible cooperative scale?
Yes, giving about 4 tonnes a day of dried bean at roughly 2.5 : 1 over a 20 to 30 hour cycle. At that level a cooperative can hold per-batch moisture records, which is increasingly what European buyers ask for alongside the beans themselves.
