Tilapia drying systems in Ghana
What the crop demands, what the country imposes, and what that means for capacity.
Lake Volta supports the largest tilapia aquaculture industry in West Africa, in cages producing fish to a schedule rather than to the weather. Almost all of it is sold fresh or smoked into the domestic market, and the smoking is done over wood in conditions that no export buyer would document.
The situation in Ghana
Better roads, better power and a deeper domestic market than most of its neighbours, and Tema is one of the region’s best-run ports. The constraint here is rarely logistics and usually raw material consistency: Ghana exports a great deal of semi-processed product that loses value because grading and moisture control are done by eye at the point where they should be measured.

Farmed tilapia is the most predictable raw material in the whole fish category: uniform size, known fat content, harvested to a schedule rather than to the weather. That predictability is what makes it worth building a documented process around — batches repeat, so a validated cycle stays valid.
Harvest calendar
Year-round. Farmed tilapia is harvested continuously, so unlike the capture fisheries there is no seasonal peak — a drying line has steady raw material every month of the year.
The working campaign window as the trade runs it. It shifts a fortnight either way with the rains.

Why is farmed tilapia easier to dry than wild catch?
Predictability. Uniform size, known fat content and scheduled harvest mean a validated cycle at 45–50 °C to a water activity of 0.70 stays valid batch after batch — where a mixed wild landing has to have its fatty fraction separated before any setpoint can be chosen.
What does year-round harvest do for the economics?
It removes the seasonality that makes most food drying capital-inefficient. A chamber working Volta tilapia runs close to 300 days a year rather than 100, so at 5 t/day and 3 : 1 the same equipment turns out roughly 500 tonnes of dried fish annually instead of 170.
Can smoked flavour be kept?
Yes, but as a deliberate flavour step rather than the heat source. Controlled hot-air drying at 45–50 °C down to a water activity of 0.70 or below does the preservation; a separate, controlled smoke application does the flavour, and the two stop contaminating each other.
