Ghana grows chilli for domestic consumption and for export to European and UK markets with substantial West African diaspora demand. Export lots are rejected on aflatoxin with some regularity, and the contamination is acquired during drying rather than in the field — chillies spread on the ground pick up mould before they reach a safe moisture.

The situation in Ghana

Better roads, better power and a deeper domestic market than most of its neighbours, and Tema is one of the region’s best-run ports. The constraint here is rarely logistics and usually raw material consistency: Ghana exports a great deal of semi-processed product that loses value because grading and moisture control are done by eye at the point where they should be measured.

What chilli drying demands

Chilli is bought on colour and on aflatoxin, in that order of visibility and the reverse order of consequence. Ground-dried chilli picks up mould during the drying itself, and a lot that fails on aflatoxin is worthless rather than downgraded. Enclosed drying at 55–62 °C addresses both at once.

Harvest calendar

October to February, following the main rains. The early part of the window still carries humidity, which is exactly when ground drying is riskiest.

The working campaign window as the trade runs it. It shifts a fortnight either way with the rains.

How does chilli pick up aflatoxin?

During drying, not in the field. Chillies spread on the ground stay above a safe moisture for long enough for Aspergillus to establish, and once the toxin is present nothing downstream removes it. Enclosed drying at 55–62 °C down to 8–10 % closes the window.

What happens to a rejected export lot?

It is destroyed rather than downgraded, which makes the risk asymmetric: a failed consignment is a total loss, not a discount. On a 4 t/day intake at 6 : 1 that is 670 kg a day of product written off. The asymmetry is what justifies controlled drying on a crop the sun would dry for nothing.

What is the yield on chilli?

About 6 : 1 fresh to dried, so a 4 t/day intake gives roughly 670 kg of dried chilli daily over a 14 to 20 hour cycle. Colour retention matters commercially as much as the safety result — buyers grade on it first.
