Mango drying systems in Côte d'Ivoire

What the crop demands, what the country imposes, and what that means for capacity.

Ivorian mango is a northern crop — Korhogo, Ferkessédougou, Sinématiali — historically shipped to Europe as fresh fruit, and therefore graded hard on size and appearance. The fruit that fails that grade is perfectly good and has nowhere to go. Drying is the obvious outlet, and the port is two days away.

The situation in Côte d'Ivoire

The largest agricultural processing economy in francophone West Africa, and the world’s largest producer of both cocoa and raw cashew. Abidjan gives it something its neighbours do not have: a deep-water port two days from the northern growing zones, which makes export-grade processing viable inland rather than only at the coast. It also means the country exports a great deal of unprocessed volume that could be processed at home, which is the gap most of these pages are about.

Growing regions. Poro and Tchologo in the north, Indénié-Djuablin and the southern forest belt

What mango drying demands

Mango is the crop that makes the case for controlled drying on its own. It arrives in a six-week wall of fruit, prices collapse exactly when volume peaks, and a large share of the crop is never picked up at all. Dried at 65–70 °C to 12–14 % moisture it becomes a twelve-month product with an export market that already exists.

Harvest calendar

March to June in the northern zones, running slightly ahead of Burkina. The fresh export campaign takes the best fruit first, so the drying line sees mostly grade-outs and the tail of the season.

The working campaign window as the trade runs it. It shifts a fortnight either way with the rains.

Market and buyer requirements

Europe, and a domestic market in Abidjan that is larger and wealthier than anything in the landlocked countries. Proximity to the port makes air freight of premium dried product realistic in a way it is not from Ouagadougou.

Frequently asked questions

Is Ivorian mango not already exported fresh?

The best of it is, on hard size and appearance grades. What drying addresses is the fruit that fails those grades and the tail of the season — perfectly good flesh with no fresh outlet, converted at about 10 : 1 into a product with a twelve-month life.

Does being near Abidjan change the economics?

Substantially. Northern growing zones are two days from a deep-water port, so dried product reaches a ship without the cross-border haul Burkinabè and Malian producers absorb. At a 5 t/day intake and 10 : 1, that is 500 kg a day arriving without several days of additional road transport.

What does 5 t/day of fresh intake produce?

About 500 kg of dried mango a day at 65–70 °C over a 16 to 20 hour cycle, at the 10 : 1 whole-fruit ratio. Across a hundred-day March-to-June campaign that is roughly 50 tonnes of finished product from a single chamber line.
