Guinean robusta comes out of Guinée Forestière, a region with genuinely good growing conditions and almost no post-harvest infrastructure. The crop is dried on the ground in a zone that receives heavy rainfall, and the resulting defect rates keep it in the lowest bulk grades regardless of the quality of the cherry.

The situation in Guinea

The wettest country in West Africa, and that governs everything. Conakry receives over three metres of rain a year, much of it in four months, and sun-drying during that window is not difficult so much as impossible. Guinea therefore has the region’s strongest case for controlled drying and the least of it installed — the crops are there, the harvest coincides with the rains, and there is no fallback.

What coffee drying demands

Coffee is dried in parchment or as whole cherry, and either way the target is a slow, even descent to 10–12 %. Uneven drying is what produces the faded, stinker and mouldy defects that get a lot rejected at the cupping table, and a lot is graded on its worst beans rather than its average.

Harvest calendar

November to February. The dry season is shorter and less reliable in the forest region than further north, so the drying window is genuinely tight.

The working campaign window as the trade runs it. It shifts a fortnight either way with the rains.

Why does Guinean coffee grade low?

On defects rather than on the cherry. Ground drying in a high-rainfall zone produces faded, stinker and mouldy beans before the lot ever reaches 10–12 % moisture, and a lot grades on its worst beans — so the underlying cup quality never reaches the buyer’s assessment at all.

How tight is the drying window in Guinée Forestière?

Tighter than further north. The dry season is shorter and less reliable in the forest region, so the November-to-February window can close early and leave a crop part-dried. A chamber holding 45–55 °C over an 18 to 30 hour cycle removes the dependency on the weather entirely.
