It replaces the heat source, and it changes the product. Ribbed smoked sheet takes its character from smoke contact; air-dried sheet does not, and grades separately. If you are producing air-dried sheet or crepe, indirect hot air across 40 to 100 °C is the straightforward route. If your buyer specifically wants smoked sheet, say so at sizing — the two are not interchangeable.
